St. Tola Celebrates 10 Years

Celebrations took place recently at Inagh, Co. Clare to mark the tenth anniversary of St. Tola Goats Cheese. Siobhán Ní Ghairbhith invited a hundred guests to tour the farm and cheese house to see how these award winning cheeses are produced. Afterwards, in the goat house, a great feast was served to the guests while the herd of over two hundred goats looked on and happily entertained the visitors as they dined.

Guests of honour were Meg Gordon, John Twomey, who recently retired as Teagasc goat advisor and Paddy Lynch, former local Department of Agriculture Inspector. Meg was the original cheese maker of St. Tola and she first started producing the cheese in 1982 with her late husband Derek Gordon in Inagh.

The menu for the days feasting included fresh mussels and oysters, followed by Burren rack of lamb supplied by Burren Life Project, Organic Pork from Crowes Butchers, salads by Jam Bakery and of course St. Tola Cheese tartlets, cheesecake and cheeseboard. To top off the celebrations, there were not one but two surprise anniversary cakes – provided by Fitzpatricks Supervalu Ennistymon and Jam Bakery. All were accompanied by a selection of organic wines provided by Mary Pawle Wines.
